Food pairing: The bramble fruit quality of this wine makes it a great match for game dishes, and the fresh acidity means exotic salads are also a great option. This could without a doubt be poured slightly chilled alongside charcuterie and salty hard cheeses too.

Charlie O’Brien is the son of Helen and Kevin O’Brien, founders of Kangarilla Road. As a small child (a photo on the website says it all) he revelled in the noise of vintage, the ‘silent noise’ that of the wine when bottled. Since leaving school at the end of 2016 he worked vintages at Gemtree and Yangarra Estate in McLaren Vale, Pikes in the Clare Valley and Domaine Astruc (part of the Paul Mas group) in Provence in the south of France. He returns to France around the time of publication to work the vintage at Chateau Lafite; the world is his oyster. Here at Corkage, we’re huge fans of Silent Noise so we’ve been serving his Shiraz straight from the fridge for summer.
