Food pairing: A hearty, chargrilled sirloin would be an obvious choice but you could just as easily make this wine sing with peppered venison or seared pigeon breasts with morcilla.
Yves Cuilleron is something of a legend in the Northern Rhône, famed for his Condrieus his Syrahs are equally excellent. ‘Cavanos’ is made solely from his oldest vines and shows exceptional finesse and intensity.
High-density planting (8,000-10,000 vines per hectares). Naturel cover cropping to avoid erosion. No insecticides with respect to soil and vine balance, few treatments (depending on weather and the necessary) and small amounts of organic fertiliser. Vigour and yield control, leaf-thinning and green harvesting to promote grape ripening. Disbudding in the spring.
The grapes are hand-picked; and then sorted, crushed and partially destemmed in the cellar. Fermented in open top, temperature-controlled vats for about 3 weeks, with regular cap-punching and pumping-over. Alcoholic fermentation in vats with native yeasts and malolactic fermentation in barrels.
