This benchmark 50 hectare estate is now in the hands of fourth-generation Gilles Fèvre and his wife Nathalie, recently joined by their daughter Julie. They have 33 hectares of Village Chablis, all on Kimmeridgian limestone, some parcels were planted by Gilles’ great grandfather, Marcel, around 1950/1960. This helps in the making of fresh, poised wines in the classic Chablis style.
There’s no oak but lots of lively stone fruit and citrus flavours with a mouth-watering, crisp finish and almost chalky minerality.
This is very pure, authentic Chablis from a proper family-owned Domaine and not one of the large co-operatives.

This wine would shine alongside oysters, shell fish and grilled fish, but also with traditional Burgundy recipes such as “jambom persillé”.
