Food pairing: Light and fragrant seafood dishes make for a classic pairing with Chablis but this steely wine has enough structure to hold up to grilled pork tenderloin or chicken thighs with a tangy salsa verde dressing and crushed new potatoes with garlic and parsley butter.
Gilles and Nathalie Fèvre are both qualified as oenologists. Gilles is in charge of viticulture and Nathalie oversees vinification.
Gilles’ great grandfather began growing grapes and making wine in and around the village of Fontenay-Près-Chablis over a hundred years ago. They have now been joined by their daughter Julie – a qualified agricultural engineer and oenologue in her own right.
This is a wonderful 50 hectare Domaine, all planted on Kimmeridgian limestone – 33 hectares of which are village Chablis. The 1er Cru Fourchaume is produced from vines planted between 1942 & 1989. It is vinified in stainless steel tanks and also sees a touch of older oak barrels.
They are absolutely delicious, mouthwatering, benchmark examples of pure, incisive, concentrated wines. These are exceptional wines from a top quality domaine of increasingly great repute.
Fourchaume is one of the best known – and largest – Premier Cru vineyards in Chablis. The vineyard is located just to the north of Chablis town on the eastern banks of the Serein river. Here, a favorable south to south-westerly aspect and high-quality limestone soils beget a distinctive Chardonnay-based wine, distinguished from other Chablis Premier Crus by its rounded lemony flavors that nevertheless retain a fresh minerality. The Fèvre family showcase their trademark excellence here with this chalky and refreshing blanc.
The wine offers vanilla, smoke and sweet cooking spices such as nutmeg alongside wonderful honeyed notes.
Fish cassoulet would be the clear choice here but don’t hesitate to pair this elegant wine with honey-mustard ham and even light curry dishes.
