Calcarius Roz Rosato 2019 – Valentina Passalacqua
Grape: Aleatico, Nero di Troia
Suitable for Vegans: Yes
Suitable for Vegetarians: Yes
Food pairing: This intriguing Rosato would be a great match for Italian charcuterie, rosemary marinated olives, aged Parmesan. It would also shine brightly alongside Rabbit Cacciatore with briny capers and a pinch of dried chilli flakes.
For another rustic Italian wine to pair with your next charcuterie board, don’t miss out on this Vernaccia, another staff favourite that would serve as an excellent counterpoint to this Rosato.
Aleatico and Nero di Troia make for a dynamic and exciting blend in this awesome Rosato. A nose of flowers, freshly chopped herbs and wild red fruits give way to a refreshing palate of strawberries, savoury thyme leaves and a crunchy acidity akin to ripe baby plum tomatoes. Valentina Passalacqua is nothing short of a biodynamic pioneer in Puglia, making waves in the natural wine scene with her vivid and delicious drops for over two decades. Based in North Gargano in a region named Apricena, the vineyards are characterised by kimmeridgian calcareous soils, hence the name ‘Calcarius’. Valentina’s wines express their terroir; tense, uncompromising with excellent minerality. This effect is highlighted even further by her plantings of indigneous grape varietals rarely seen outside of the region: Nero di Troia, Greco Bianco, Bombino, Negroamaro and Aleatico.
